Bhindi Sabzi Masala

We love making vegetable curries! Bhindi ( okra) is our all time favorite sabzi – and I like mine with lots of tomatoes !! This is my recipe which requires little oil as I don’t believe in deep frying the bhindi. The reason our ami’s fried bhindi was to remove the sticky lace from it- but hey!! Here’s a hack! Squeeze in some lemon juice and viaola- no lace in there.

Ingredients:

-Oil 1 tbs

-Bhindi (Okra) ½ kg

-Onion Sliced 2- 3

– Garlic Chopped 1 tbs ( I usually do this andaze se$

-Hari mirchien – 2-3 chopped

-Tomatoes Chopped 2-3

-Namak to taste

-Haldee powder to taste

– Coriander powder ½ tsp

-Lal mirch powder (Red chilli powder) 1 tsp or to taste

-Lemon juice 1-2 tbs

-Qasuri methi (Dried fenugreek leaves) ¼ tsp

-Hari mirch (Green chilies) 2-3

-Hara dhania (Green coriander)

Directions:

-In pan,add little oil,okra and fry for 4-5 minutes – squeeze in the lemon juice – and set aside.

-In the same pan,add 2 tbsp oil and onion,fry until translucent.

-Add garlic and green chilis ,mix well.

-Add tomatoes,salt,turmeric powder,coriander powder,cumin powder,red chili powder, red chilies and mix well until tomatoes are soft. ( achaye se bhono) – you will get that aroma- ahh

-Add stir fried okra and mix well.

-Add dried fenugreek leaves,green chilies,green coriander – give it some dam- and serve hot with rotis!

Super Easy and Quick Chicken Karhaye

This is my all time favorite recipe for kerhaye, it’s very quick and doesn’t require any fancy ingredients! Ready in no time and delicious!

Ingredients:

-Chicken karhai cut ½ kg

-Lehsan paste (Garlic paste) 1 tbs

-Tamatar (Tomatoes) chopped 3-4 medium

-Hari mirch (Green chilies) 3-4

-Kali mirch (Black pepper) crushed 1 tsp- to taste

-Namak (Salt) 1 tsp or to taste

-Hara dhania (Fresh coriander) chopped

-Adrak (Ginger) julienne ( optional)

– -Oil 1/4Cup

Directions:

-In wok,add oil and chicken,mix well until changes color.

-Add garlic paste,mix well and fry until light golden.

-Add tomatoes,cover and cook on low flame for 10-15 minutes or until tomatoes are tender.

-mix well and cook on high flame for 2-3 minutes.

-Add green chilies and mix well.

-Add black pepper crushed,salt and mix well for 1-2 minutes.

-Garnish with fresh coriander,ginger & serve with roti salad and raita!
