Oats and Suji pancakes

This has been Nayel’s favorite snack since many months now! Sharing recipe here with you all! They’re oats and semolina pancakes- gluten free , egg-less and very healthy. Mostly for evening I make a couple of these for him. Do try and let me know!

Oats and Semolina Pancakes

Ingredients:

•1/2 cup ground quick oats

•1/2 cup semolina (suji)

•3-4 tbsp Yoghurt

•Salt to taste

•Ground coconuts- optional

•Butter or desi ghee

•Water

.

Directions:

•Mix ground oats, semolina, salt and coconut in a bowl.

•Add Yoghurt and make it into a thick paste kind of batter. Leave it for 15-20 minutes.

•Add water- enough to make a thick pancake batter which is not very runny.

•Brush a pan with desi ghee, pour the batter into small thick cake size- cook on low heat- brown from both sides.

•Cut into pieces or hand it to kids this way- not too hot please! Enjoy!! – even I love snacking em!!

Hot n sour soup

I love having soups! 🥣 Especially with winters coming in- I can have a bowl each day!! My favorite’s Hot n sour- with right amount of spices and lots of green chillies in vinegar- unfortunately I don’t find it here in the UAE except for Peeking in Sharjah- but hey! I can make my own yummy kind too. Here’s the recipe for you to try as well- .

Ingredients:

👉🏼 Chicken Broth( use bones to take out the yakhni- add a clove of garlic, salt and pepper)

👉🏼 One carrot 🥕 👉🏼 One Cup cabbage 👉🏼 One egg

👉🏼 soya sauce, vinegar , salt n pepper to taste.

👉🏼 one tablespoon tomatoe ketchup ( this is my secret ingredient.) 👉🏼 4-6 table spoons of cornflour mixed in water.

Directions:

👉🏼Wash the chicken pieces. For 4-6 cups of soup I’ll suggest 5 chicken pieces with bones. Add around 8 cups of water with garlic salt and pepper and let it simmer on low heat until half is left- thats the broth you get. And at anytime if you feel it’s less, add regular water.

👉🏼 Shread the chicken intk pieces. Remove the bones. In the chicken broth- add the chicken and let it cook on low heat.

👉🏼 Add the chopped carrots and cabbage- don’t cook too much. Add in the soya sauce,vinegar, salt and black pepper- according to your taste. You can always add more veggies such as mushrooms, corn, peppers.

👉🏼Add a tablespoon of tomato ketchup and mix! Yum.

👉🏼 now slowly add one egg- I use the egg white only- but you can use all too. Lightly beat it and add. Don’t keep stirring. Wait for a minute so that egg pieces look nice and big. Elsewise they all mix together.

👉🏼 Now add in the mixed cornflour with water slowly to get the right consistency of the soup. I usually keep mine not too bulky.

👉🏼 Turn off the flame and serve hot with fish crackers or garlic bread! I didnt have either😭

Oatmeal chocolate chips cookies!

Who doesn’t like cookies especially when they have chocolate chips in them and a bit healthy too. I like mine a little soft- chewy- warm and crumbly. How about you?

Oatmeal Chocolate-chip cookies.

(Makes around 20 medium size cookies)

Ingredients:

▫️ 3/4 cups sugar( if you have brown- better)

▫️1/2 cup butter or margarine, softened

▫️1/2 teaspoon vanilla

▫️1 egg

▫️1 1/2 cups quick-cooking oats

▫️1 cups all-purpose flour

▫️1/2 teaspoon baking soda

▫️Pinch of salt

▫️1/2 cup @hersheysarabia semisweet chocolate chips.

Directions:

▫️Preheat over to 180 degree for atleast 20 min.

▫️Cream together the egg, sugar and butter. Add the vanilla.

▫️Stir in oats, flour, baking soda, salt.

▫️ once all mixed- add in the chocolate chips.

▫️grease the baking sheet on to a baking tray. Make round balls with hand or just a spoon full splatter of cookie dough with space apart!( for rough texture).

▫️Bake the cookies for 10-12 min. And if you like yours well done- 3 min more.

▫️Store in an airtight jar. And enjoy!

Tip: you can even freeze the cookie dough- and defrost when you want to make again 🙂

Arvi Gosht

Arbi or arvi is known as taro root in English. It’s one dish that I have always loved – esp in winters. I still have the taste of my dadi and mama k hath ka salan which we always loved with lemon juice and lots of piyaz and tamatar! Sath mai tandor k roti! Hayeee

Here’s the recipe that I tried today and it turned out great as well! Kuch muhabbat ka ferk hai bus jo sirf baron k hath se he ata hai- baki all’s good! ❤️

Arvi Gosht

Mutton – 1 kg

Arvi- 1/2 kg

Onion- 1 large

Garlic cloves – 3-4

Salt – to taste

Yoghurt- 1/2 cup

Red chilli powder – 3/4 tbsp

Turmeric- 1tsp

Shan Paya Masala – 1-2 tbsps

Oil- 2-3 tbsl

Corriander and green chillies to garnish.

Directions:

1. Slice onions and fry them in oil.- turn slight brown

2. Add mutton and mix well till the smell goes.

3 Add salt, red chillies, turmeric along with yoghurt.

4. Add water and let the meat get tender. I usually make it in pressure cooker so gets tender in 15 min.

5. After its nice and soft mix well and add arvi. Now initially I peeled off the arvi and soaked it in water with salt for an hour. I washed it well after that.

6. Mix it all nicely and add water – I like mine shorba sort so add accordingly. Let it simmer on low.

7. Add 1-2 tbsp of Shan Paya Masala- it’s my mother in law’s tip and I add it to all shorba sort curries that I’m making – alu gosht esp! The flavour i will give is just going to be amazing!

8. In the end- add chopped corriander and green chilies- simmer for 5 min and serve hot with lemon and piyaz tamatar! Tandor k roti ho to kya he bat!!

Bhindi Sabzi Masala

We love making vegetable curries! Bhindi ( okra) is our all time favorite sabzi – and I like mine with lots of tomatoes !! This is my recipe which requires little oil as I don’t believe in deep frying the bhindi. The reason our ami’s fried bhindi was to remove the sticky lace from it- but hey!! Here’s a hack! Squeeze in some lemon juice and viaola- no lace in there.

Ingredients:

-Oil 1 tbs

-Bhindi (Okra) ½ kg

-Onion Sliced 2- 3

– Garlic Chopped 1 tbs ( I usually do this andaze se$

-Hari mirchien – 2-3 chopped

-Tomatoes Chopped 2-3

-Namak to taste

-Haldee powder to taste

– Coriander powder ½ tsp

-Lal mirch powder (Red chilli powder) 1 tsp or to taste

-Lemon juice 1-2 tbs

-Qasuri methi (Dried fenugreek leaves) ¼ tsp

-Hari mirch (Green chilies) 2-3

-Hara dhania (Green coriander)

Directions:

-In pan,add little oil,okra and fry for 4-5 minutes – squeeze in the lemon juice – and set aside.

-In the same pan,add 2 tbsp oil and onion,fry until translucent.

-Add garlic and green chilis ,mix well.

-Add tomatoes,salt,turmeric powder,coriander powder,cumin powder,red chili powder, red chilies and mix well until tomatoes are soft. ( achaye se bhono) – you will get that aroma- ahh

-Add stir fried okra and mix well.

-Add dried fenugreek leaves,green chilies,green coriander – give it some dam- and serve hot with rotis!
